The Process
Cooking a burger to the perfect temp is all about time and heat. We spent a lot of time determining a temperature that would produce the perfect amount of crust—the real secret is in the timing.
We found that the perfect burger cooks in the same amount of time that Queen’s “Bohemian Rhapsody” plays.
Our executive chef Aaron Ballard choreographed the cook time to flip at certain places in the song: “Mama, I don’t wanna die.” (first flip). Cheese gets added at “So you think you can stop me.” And the burger finishes to a perfect 155° as the song fades away.
Because Bohemian Rhapsody has no repeating parts and distinct transitions, it makes the perfect timer.
The Chef
Just Burgers is the brainchild of Harmons executive chef Aaron Ballard. His inspiration centered around creating a burger patty that could be enjoyed by itself and then build on that. “We started testing all sorts of grinds from different cuts and breeds of cattle from chuck and top sirloin to strait wagyu brisket. What we finally ended up with after months of grinding and testing was a patty that represents a great balance of rich fat, tenderness and flavor.”
Chef Aaron says every aspect of Just Burgers is about creating a memorable burger experience. “I know every time I go there, I am not just hoping my meal will be good—I know it will be.”
